Waffles from Scratch

Erin loves waffles, but Bisquick, our previous goto mix, has soy sometimes now “…Vegetable Oil (palm, sunflower, canola, and/or high oleic soybean oil)…” That made waffles a choice between rolling the dice on allergies or settling for a mix we felt just didn’t taste as good.
Our friends Kim and Tal made these waffles for us at a DnD night though, and they were phenomenal! Better than Bisquick with a nice chewy texture and lots of flavor, our new staple. Is the yogurt magic??? Probably…
Instructions #
- Melt the butter and set aside to cool slightly but not resolidify
- In a large bowl, mix together the dry ingredients
- flour, sugar, baking powder, salt, and baking soda
- In a separate bowl, whisk together the wet ingredients
- yogurt, milk, melted butter from step 1, and eggs
- Gently fold wet into dry, without over mixing
- Cook in your favorite waffle iron!

- 240g (2 cups) all-purpose flour
- (Or for a “whole grain” feel, 1⅓ cup all purpose + ⅔ cup whole wheat)
- 15g (1 Tablespoon) white or brown sugar
- 8g (1 teaspoon) baking powder
- 5g (1 teaspoon) fine salt
- 3g (1/2 teaspoon) baking soda
Wet #
- 6 Tablespoons unsalted butter
- 1 cup plain yogurt
- 1 cup milk
- 4 large eggs
