Black Bean Dip

This recipe comes by way of my aunt Marilee. It was a crowd favorite growing up, and is absolutely amazing by the water on a hot sunny day!

Instructions #

  1. Combine marinade ingredients in a shaker bottle
  2. Shake… shake… shake… yeaaaha!
  3. Pour marinade over beans and corn in a big bowl
  4. Let sit in fridge for 3 hours minimum, overnight if possible
  5. Drain marinade
  6. Add green onion and feta cheese
  7. Serve with fritos and/or scoop chips of choice!

Marinade Ingredients #

  • 1 cup oil (canola or vegetable)
  • 1 cup white vinegar
  • 3/4 (or 1/2 for a more tart experience) cup sugar

Body Ingredients #

  • 2 cans of black beans (15oz.), drained and rinsed
  • 2 cans white shoe peg corn, drained and rinsed
  • 3-4 green onions, sliced
  • 4oz. feta cheese

Other Stuff #

  • Some chips! Fritos or scoop tortilla chips recommended :)
